Lemon, Lime & Poppy seed Madeleines

Ingredients

  • 100 gram Gluten Free Flour
  • 100 gram Caster Sugar
  • 1/2 tsp baking powder
  • 40 ml milk
  • 1 Egg
  • 1/2 tsp Vanilla Extract
  • 60 gram butter
  • 1 lemon zest only
  • 1 lime Zest only
  • 1 tsp black chia seeds

Instructions

  • Oven preheated to 180C (fan forced)
  • Melt butter on stove until foaming and nut brown.
  • Meanwhile combine Sugar, Flour and baking powder and whisk quickly to combine.
  • In a separate bowl combine egg, vanilla and milk and whisk to combine.
  • Add the egg mix to the flour mix and whisk to combine
  • Now Add the zest of both lemon and lime, and the Chia seeds and whisk.
  • Its time for the butter to be added in 2 batches, whisking carefully until just incorporated.
  • Butter a Madeleine tray and fill until 3/4 full.
  • Bake for 14 minutes, until just cooked. The batter should make around 18 madeleines.

Notes

  • Chia seeds can be found at major supermarkets, online and health food stores.
